
Maca Milk
Make almond milk by blending 1c almonds with 3c water and 2 dates. Strain through a nut milk bag and return to blender with 2 bananas, a handful of strawberries, 1T maca. Blend again and savour – feel the tension fade.
Breakfast in a Glass
Chop mixed berries, nuts, coconut chips, goji berries and place in a glass. Top with almond milk as above. Breakfast Heaven!

My Christmas dinner 2008
I tried to recreate a meal I’d had with the LBD girls at SAF earlier in the month and had great fun creating a raw 3 course meal for myself, more so I have to admit , than cooking dinner for the rest of my family.
For starters I had red beet ravioli. The beetroot was cut as thinly as I could and marinated in olive oil, lemon juice and salt. This was then stuffed with cashew cheeze – cashew nuts blended with lemon juice, lemon zest, nutrirional yeast(not raw I know but adds to the flavour), salt and then spring onions and tarragon were mixed in. This was garnished with spirals of courgette and carrot.

For my main course I had Spring Rolls and Christmas Salad. The wraps were adaptted from Russell James’s recipe, made from blended and dehydrated courgette, ground flax seed, olive oil, lime juice and spices, stuffed with mixed vegetables marinated in olive oil, nama shoyu and spices. Accompanying this I made a very simple green salad sprinkled with pomegranate seeds. Delicious!!!

For pudding I had Mango and Pineapple Cheesecake. The base was made from almonds and dates processed finely and pressed into a cake tin. The topping was made from blended cashew nuts, pineapple, mango and agave to taste. I’m not really a pudding girl but this hit the spot – not too sweet, and packed with my favourite fruit.
